For my son’s 3rd birthday, we hosted a Dr. Seuss themed brunch at our home. Dr. Seuss is a favorite of the whole family (and Dr. Seuss went to the same college and was in the same fraternity as my husband…but not the same year
). This post will also be sprinkled with some creative and frugal entertaining tips.- on the front door
I found this wreath in the Dollar Spot at Target and the M is scrapbook paper.
That big Cat In The Hat framed photo is actually a Cat In The Hat puzzle that I assembled on top of the framed [Starry Night] picture that is normally there. I used scotch tape on the backs of the puzzle pieces to keep it in tact. The birthday banner is from Dollar Tree (streamers and balloons can also be found at Dollar Tree).

The frame and easel are from Dollar Tree and I used scrapbook paper to “Seuss” it up.
- Green Eggs and Ham
The “Green Eggs” are actually Spinach Mini-Quiches made from this amazing (and easy) recipe.
The ham was bacon and I also made breakfast casseroles and there was fruit salad, pigs in blankets, bagels, pastries, mimosas, etc.

I have a stash of these kid chairs since we entertain often (they can be bought individually at Walmart).
I also made those blue frosted cupcakes, they were banana and SO delicious. Recipe here.

My sister I dressed like the Cat In The Hat (she found the hats at Party City).
A good time was had by all and I would like to give a giant Thank YOU to my sister and her boyfriend who came over the night before to decorate because I really couldn’t have done it without them. We so blessed to have such wonderful friends and family to celebrate with!
